INGREDIENTS
3.5 oz. (100g) black rice noodles
7 oz. (200g) ground turkey
1 head of broccoli, cut into florets
4 tbsp. tamari
2 tsp. sesame oil
1 tbsp. rice vinegar
1 tbsp. grated ginger
2 tbsp. chopped spring onions
handful of coriander, chopped
Cook the noodles as directed. Strain, rinse with cold water, and set aside. Mix 1 tbsp of tamari, sesame oil, rice vinegar, and grated ginger in a small bowl to make the sauce. Set aside. Heat 1 tbsp olive oil in a wok over medium heat. Sauté the turkey for 3-4 minutes. Add broccoli and cook for 1-2 minutes. Then, add half a cup of water and 3 tbsps of tamari. Cook until the water evaporates and the broccoli is tender, about 10 minutes. Add noodles to the turkey and broccoli. Heat for 2-3 minutes, stirring gently. Remove from heat, pour the sauce over, and toss to combine. Garnish with chopped spring onions and coriander. Serve and enjoy this healthy turkey broccoli stir-fry!
